Agar, also known as agar-agar, is a mix of carbohydrates extracted from seaweed, specifically red algae. It’s also known by its Japanese name, Kanten. Agar agar has no flavor, odor or color so it’s helpful as a culinary ingredient. It can be used as a substitute for gelatin, cheese, fruit jelly, jello shot, gummy bears, yogurt, pudding, jam, homemade mousse, sauces and dressing, etc. Agar Agar can also be used as a filling/ thickening agent in pies, pastries, and cakes. Also perfect for face masks, hair masks, and a great source of dietary fiber!

What is Agar Agar made of? Is it healthy?
The only ingredient is 100% Red Algae, found 500 feet deep in the sea.
Our Red Algae goes through a filtration process repeated several times to create out clean and healthy Agar Powder.
All that’s left is abundant nutrients. It consists of 50% or more of Dietary Fiber and 10% of minerals (Calcium, Potassium, Iron, etc.). A little goes a long way. Usually, 1 tsp is enough to make 250 ml of food.

Agar Agar can come in powder form, flakes, or sheets. Flakes and sheets have to be soaked before use, so powder is much more convenient to use when cooking with Agar Agar.

Usage

We recommend 1tsp of Agar Agar powder for 1-1.5 cup of water or juice, but it could be flexible. Make sure you don’t add powdered Agar Agar into boiling water. Add the powder in cold water first, stir, then bring it to a boil until it’s clear that you no longer see tiny grains. If you want to add thick-flavor such as puree, put it after it is entirely dissolved into the clear liquid.

Sweeteners & salt (The sweeter the ingredients are, the more transparent it becomes) – Avoid: Acidic ingredients, egg whites, milk (If you must add these ingredients, wait until after boiling and cooling)

For 1 cup of liquid you will need (Agar Agar)
Gummy bear (2 tsp)
*Agar Agar is not as sticky as gelatin!
Pudding, Pana Cotta (1 tsp)
Jello shots (0.5 tsp)
Hard cheese (1 Tbsp)
Cheese sauce (1 tsp)
*Amount could vary. Please follow your recipe for the best results.

Tips & Know-how

You need to pour it right away while its hot so that it can stick together.

Agar Agar is reusable and prevents waste! Even if it hardens, it can be heated and melted again. No need to throw it away, you can reuse what’s left after cooking!

The order is important to follow! Mix the liquid & powder at room temperature first and then bring it to a boil. It becomes lumpy if you try to mix it while the water is boiling. Boil for at least 2 minutes after a 212°F (100°C) drop.
